The Food Science Product Development team’s Mediterranean Cheese Puff appetizer

The product development team of food science students Emma Williams, Corena Newton, Avery Smith and Geraldine Santos-Norris won first place April 21 in the product development competition sponsored by the South Eastern Section of the Institute of Food Technologists. Charged with developing a new food product, the team created the Mediterranean Cheese Puff, a baked appetizer made of goat cheese Carmine’s onion thyme mixture with fig preserves stuffed in a puff pastry.

After winning first place in the regional competition, the team has the opportunity to attend the New Products Conference in Palm Beach, Fla., in September. The team hopes to raise funds to travel and represent their region and Auburn University at the event.
